Jim's Mom sent over a 'spare' pork tenderloin a couple of days ago. Man, I hate it when that happens! ;)
I marinated it overnight in:
~4T Soy
~T olive oil
2 garlic cloves, mashed
1 inch or so of ginger, grated
2T brown sugar
2t pepper
Cooked at 425 for 30+ minutes or so (to 160)
So extremely juicy and flavorful!
