Doug's Balls & Sauce

 Balls recipe is as follows:


1 lb - 85% ground beef
1 lb - ground pork
1 - egg
bread crumbs, I add enough to make a thick slurry in the egg
a dash of smoked paprika, use caution too much paprika makes the balls taste like hot dogs
basil to taste
salt and pepper
 I've also taken to adding Boars Head Picante Provelone. In my latest, and most successful attempts, I put the provelone in my food processor and process it to a coarse and like consistency. I mix it with the meat mixture. I brown them in a pan with olive oil and then finish them in the sauce.

Pasta Sauce 

The ratio is 4 cloves of garlic to one can of whole tomatoes. I use Scalfani brand tomatoes, you can get them by the case on Amazon. San Marzano style tomatoes will also work well, but they are pricey. I saute the garlic in olive oil until it is just starting to brown, then add the tomatoes and simmer. I like to simmer it for several hours 4-6. Add salt and pepper to taste and you can add basil if you like. The one I made last time was a quick sauce, it only simmered for an hour, it also had basil.
